What happens to my graph after you're done building the site from it?

It can be stored in the place of upload (AWS S3) for up to 2 days and then deleted. This is driven by the minimal retention period of AWS S3.

How are you going to use the data that is in my graph?

We don't use and have no plans to use the data from the graph for the purposes other than building the site with the settings you've specified.
